Marinate catfish chunks with salt, pepper, and shallots

Warm up pot with oil enough to cover the bottom of the pot

Add a few spoons of sugar and heat on medium heat, stirring until fully liquid and light brown
|
Take off heat and stir in minced shallots
|
Put pot back on burner and stir for few more minutes until shallots golden
|
Pour in some nuoc mam
|
Layer the pan bottom with yellow onion strips and sprinkle in pepper
|
Layer fish on top of onions
|
Add water up to top level of fish
|
Cook on medium for 30 min
|
Add nuoc mam for flavor
|
Cook on low heat for 30 min until reduce 50% of liquid
