Plan for 1 large onion per half a head of cauliflower

Caramelize onion & shallots with a sprinkle of salt

Once browned, add minced garlic and ground coriander & cumin
|
Add cauliflower and sauté for light color (or use roasted / pan fried cauliflower)
|
Add chicken broth to just cover, adjust to taste
|
Simmer until cauliflower is cooked (15-20 min)
|
Cauliflower total cook time 30 min
|
Cool then blend with a spoon of yogurt until smooth
|
Adjust to taste with salt & pepper
|
Add a squeeze of lime and zest (any citrus zest)
|
Garnish with chopped herbs (cilantro, dill, mint, chives, etc) and gold raisins
|
Eat with bread
