chicken boullion chicken thighs green onions
fish sauce pork shoulder shallot
oil shrimp water chestnuts
oyster sauce
pepper
salt
soy sauce
sugar
vinegar
wonton egg wrappers

Cut meat into very small pieces with knife - do not use processor
Mix meat and shrimp at a 1:2 ratio, minced shallots, water chestnuts, fish sauce, oyster sauce, chicken boullion, sugar, salt, pepper, and oil
Wrap small spoonful of mixture into wrappers
Fry: boil potstickers with small bowl of water in pan covered, then remove cover to let water boil out, add oil and fry until bottoms are golden brown and crispy
Boil: add to a pot of boiling water, once it has floated to the surface, cook for 2-3 more min
Steam: steam for 10 min
Sauce: stir fry shallots, lower from heat and add soy sauce, water, vinegar, sugar, and adjust to taste
