Cut meat into very small pieces with knife - do not use processor

Mix meat and shrimp at a 1:2 ratio, minced shallots, water chestnuts, fish sauce, oyster sauce, chicken boullion, sugar, salt, pepper, and oil

Wrap small spoonful of mixture into wrappers

Fry: fry in cast iron until bottoms brown, then add small amount of water to cover bottom, cover with lid and steam for 1-2 min, remove lid to evaporate water, and fry until bottoms are golden brown and crispy

|
Boil: add to a pot of boiling water, once it has floated to the surface, cook for 2-3 more min
|
|
Steam: steam for 10 min
|
|
Sauce: stir fry shallots, lower from heat and add soy sauce, water, vinegar, sugar, and adjust to taste
