Galbitang (Korean Beef Short Rib Soup)

fish sauce beef short ribs daikon
pepper garlic
salt green onions
sesame oil onion
soy sauce seaweed
thick glass noodles shallot


Instructions

Soak short ribs for about an hour before cooking
Marinate beef short ribs with salt & pepper
Golden minced shallots
Add one layer of short ribs and sear both sides until golden; do not crowd pan, use multiple batches if needed
Add water and adjust to a simmer
Add onion, garlic, green onions, and daikon
Simmer until short ribs are medium well
Adjust to taste with fish sauce
Assemble bowl with thick glass noodles, seaweed, green onions, 2 tsp of soy sauce, a drop of sesame oil, adjust to taste
