| Blanche water spinach (rau muong, ong choy) until texture is sufficiently cooked/crunchy, stems should go longer than leaves |
| Saute minced shallots and garlic until slightly golden |
| Add in water spinach |
| Stir in diluted mam tom |
| Stir fry for few minutes |
| Save liquid used for blanching for canh |
