Blanche water spinach (rau muong, ong choy) until texture is sufficiently cooked/crunchy, stems should go longer than leaves |
Saute minced shallots and garlic until slightly golden |
Add in water spinach |
Stir in diluted mam tom |
Stir fry for few minutes |
Save liquid used for blanching for canh |
