shallot
water spinach

Blanche water spinach (rau muong, ong choy) until texture is sufficiently cooked/crunchy, stems should go longer than leaves
Saute minced shallots and garlic until slightly golden
Add in water spinach
Stir in diluted mam tom
Stir fry for few minutes
Save liquid used for blanching for canh
