Ginger miso vinaigrette - 1 rice vinegar : 2 oil : 0.5 sesame oil : 0.33 white miso; grated ginger (1” knob), salt to taste, 1-2 dates + water as needed to thin out dressing

Chimichurri - 1 balsamic vinegar : 2 oil, garlic, oregano, lots of herbs (cilantro, mint), salt & pepper to taste, water as needed
