Thit Kho (Braised and Carmelized Pork Belly with Eggs)

nuoc mam eggs shallot
pepper pork belly
salt


Instructions

Marinate pork belly cubes with salt, pepper, and shallots
Warm up pot with oil enough to cover the bottom of the pot
Add a few spoons of sugar and heat on medium heat, stirring until fully liquid and light brown
Take off heat and stir in minced shallots
Put pot back on burner and stir for few more minutes until shallots golden
Pour in some nuoc mam
Stir fry in pork belly
Add water up to top level of pork
Cook on medium for 2 hours, removing meat foam
Hard boil eggs and add that to pot
Add nuoc mam for flavor
Cook on low heat for 30 min until reduce 50% of liquid
